Talking points

Ok look! Don’t feed another human being something you yourself would not consume. People listen. Culinary 101. Layer your flavors so that you have a chance at exciting someone’s pallet. Presentation is also a very important part of the equation folks and here’s why. Are you going to eat something that looks like dog food. Guess what? Neither will anyone else and I don’t care if you’re standing over the dish saying, Come on. Just taste it. I promise it is so good.  Nope, this just isn’t going to be a good experience.

Fresh, fresh, fresh…..that’s what people want and what people taste. But more importantly this is something people deserve. So if you’re cooking with three day old poo, then that’s what your feeding people and let’s be honest, who wants to eat poo? Yeah, I didn’t think so. Here are some helpful hints to ensure you remain a professional who deserves to be in the kitchen.

Monitor your inventory and rotate your stock.
Leftovers should be covered and stored properly with dates clearly present.
Use the old first.
Smell all your dairy regardless of the date, just because the date is good doesn’t mean the product is.
If a product has an expired date….THROW IT OUT.
Ask people if there’s anything they would change about your food service.
Have a white board for allergies and be aware.
Clean your tools, knives, cutting boards, towels, hands, mixing bowls…etc…
Be present at work, not necessarily physically but mentally. Be alert. You are responsible for the well being of people through the food you serve them.
Be respectful and courteous you owe that to other human beings.
Go out of your way to please someone’s pallet even if it is an inconvenience to you.
